Soa worked with Eric Ripert at the 3 Michelin starred restaurant, Le Bernardin for 6 years – to eventually become the Director of Operations, Culinary Producer, and Head of Research & Development under the Ripert umbrella. In addition, she managed the development and launch of the critically acclaimed book "On the Line", produced and styled the Emmy-award winning television show "Avec Eric", along with the companion cookbook.
In 2014 Soa started working with David Chang to launch Maple, a food delivery start up that operated as a delivery only restaurant. Soa worked with a team of guest chefs including Mark Ladner, Dan Kluger, Christina Tosi and Brooks Headley in developing a seasonal ingredient focused delivery menu. Maple was acquired by Deliveroo, a UK based delivery company in the spring of 2017.
Soa has been a hospitality consultant for brands such as Virgin Hotels, Standard Hotels, Andre Balazs Properties and others in developing restaurant concepts and menu development and setting up F&B operations. For the past few years, Soa worked as the VP of Food & Beverage for Andre Balazs, overseeing F&B operations for his luxury hotels and restaurants at the Chateau Marmont, Chiltern Firehouse, Mercer Hotel and Sunset Beach Hotel. In February of 2019, Soa opened her first solo project with a 120 seat restaurant in the Hammer Museum in Los Angeles.
